Why is Food Safety Important?

Food is essential to life but most of us don't think much about food safety before sitting down to eat. The unfortunate fact is that every year food-borne illness kills about 3,000 people and sickens about 48 million!

Why is food safety important?

Many cases of food-borne illness happen because of improper food handling. If you're in the restaurant business or other food-handling situation, it's crucial you understand food safety.

1. Wash Hands

One thing Covid has taught us is the importance of washing hands. Don't underestimate this simple act. Always wash your hands before touching any food.

Use soap and water and wash your hands for at least 20 seconds. Rub them together hard and don't forget the backs of your hands and your fingernails.

Make sure everyone on your team understands the proper mechanics of handwashing.

2. Sanitize Work Surfaces

Clean all work surfaces removing any grime, dirt, and food remnants. Then sanitize the surfaces. Sanitizing is a deep cleaning to remove pathogens.

Use non-corrosive, stable cleaners that are safe for kitchen use. Always follow the manufacturer's instructions.

3. Clean Foods Before Cooking

Clean all foods before prepping and cooking. Wash produce under cold running water and remove any dirt. Don't use soap or detergent when washing fruits and vegetables.

Clean beans and whole grains by rinsing under cold running water. This removes starch, dirt, debris, and germs.

4. Store Foods at the Proper Temperature

Dangerous bacteria grow between 40-140 degrees Fahrenheit. Keep cold foods below 40 degrees and make sure cooked foods remain at 140 degrees or higher before serving. Avoid keeping foods out of the refrigerator for more than two hours.

5. Avoid Cross-Contamination

Cross-contamination is when bacteria from your hands or another object, like a knife, transfer to another object or food. Washing your hands frequently helps avoid cross-contamination.

It's also important to use separate utensils for different foods and wash the utensils frequently. Never cut raw chicken or meat and then use the same knife on fresh produce. Always sanitize surfaces between uses.

6. Pay Attention to Food Recalls

Pay attention to all food recalls. Romaine lettuce and raw spinach are items that have both had recalls in the past. Talk to your suppliers often so you know you'll hear recall news immediately.

7. Maintain Equipment

Clean and maintain all your kitchen equipment on a regular basis. Keep an equipment cleaning schedule and train all employees on proper use and maintenance.

Every day you should clean out grease traps, run the hood filters through the dishwasher, and wash the can opener.
